Low Carb Pots de Creme

  • 14 oz. 70% cacao chocolate bar (or for lower carbs try 86% cacao with 1/4C stevia or spenda)
  • 4 eggs
  • 8oz. boiling coffee (I used a nescafe tasters choice single use packet )
  • dash sea salt
Makes 8-12 servings


In a blender, chop the chocolate bar.
Then add the salt, and eggs. Blend to mix.
Then add the boiling coffee.
Blend until the chocolate is completely melted and the mixture is smooth and thick.
Pour into serving dishes and chill several hours.

For the whipped cream:
Use a blender, immersion blender, or elbow grease with a whisk to whisk up a cup of heavy cream, mixed with a few packets of stevia (to taste) and a bloop of vanilla or almond flavoring. With an immersion blender, it stiffens up in less than a minute.

My husband says, "This is restaurant quality. Are you going to finish yours?"   Success!
