Cheesy Chicken

3-4 chicken breasts or 2-3C rotisserie chicken
1 container sour cream (15 oz )
1/2C butter melted (or not. It adds richness.)
2 cans cream of chicken soup (or any “cream of” soup you have on hand. I hate mushrooms.)
1 bag shredded cheddar cheese
1 can of pringles or 3 cups of corn flakes, panko, pork rinds, whatever crunchies you like- crushed
Bake chicken at 400* for 20 mins and then shred.
Mix sour cream, butter, soup, and cheese together in bowl.
Add chicken and coat. Then toss in a casserole dish.
Crush your crunchies of choice over the top, spray with pam.
Bake at 350 for 1 hour

You can also do this in the crockpot. Cook for 2-3hrs on high or 6-7 hrs on high. Watch for doneness. Then add your crunchies.

You can add rice or quinoa to this, if that's your thing, as well.
Leave the "crunchies" off if you're eating low carb.
