Mommy Mac Hack - Low Carb Cauliflower "Mac"

1 head of cauliflower chopped finely (food processor makes it easy)
1 (8 oz) pkg shredded sharp Cheddar cheese (if its not sharp it will be a little bland)
1 (12 oz) container small curd cottage cheese
1 (8 oz) container French Onion sour cream dip (all things with sour cream are tasty!)
¼ cup grated Parmesan cheese
1 cup crunched up pork rinds or finely chopped almonds (again, use the food processor)
¼ cup butter, melted

Preheat oven to 350 degrees. Pop your chopped cauliflower into the microwave for about 3 minutes.
In 9x13 pan, stir together cooked cauliflower, shredded cheddar cheese, cottage cheese, sour cream dip, Parmesan cheese.
In a small bowl, mix together pork rinds or almond crumbs and melted butter. Sprinkle topping over cheesy mixture.
Bake 30 to 35 minutes, or just pop it back into the microwave for a few minutes.
