Baked Mommy Mac: four ways

Okay, so Baked Mommy Mac has been a real hit. How could it not be? It's easy, sinful and delicious. But how could we make it better? What are your favorite foods?

How about bacon? or Pizza? or Tacos? or Cheeseburgers?
Well here you go!

Bacon Cheddar Mommy Mac - little piggy style

1 (8 oz) pkg. elbow macaroni
1 (8 oz) pkg shredded sharp Cheddar cheese (if its not sharp it will be a little bland)
1 (12 oz) container small curd cottage cheese
1 (8 oz) container sour cream (all things with sour cream are tasty!)
1/2 a package of bacon, cooked and chopped into bite sized bits
¼ cup grated parmesan cheese
1 cup dry seasoned bread crumbs (or crunched up pringles or corn flakes - whatever you have)
¼ cup butter, melted

Preheat oven to 350 degrees.
Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
In 9x13 pan, stir together macaroni, shredded cheddar cheese, cottage cheese, sour cream, bacon & parmesan cheese.
In a small bowl, mix together bread crumbs and melted butter.
Sprinkle topping over macaroni mixture.
Bake 30 to 35 minutes, or until top is golden.


Cheeseburger Mommy Mac

1 (8 oz) pkg. elbow macaroni
1 (8 oz) pkg shredded sharp Cheddar cheese (if its not sharp it will be a little bland)
1 (12 oz) container small curd cottage cheese
1 (8 oz) container sour cream (all things with sour cream are tasty!)
1lb ground beef, cooked and crumbled
1/3C ketchup or 1T tomato paste
1 medium tomato, chopped
1/4C green onions, chopped1 cup dry seasoned bread crumbs or crunched up pringles or corn flakes - whatever you have
¼ cup butter, melted

Preheat oven to 350 degrees. Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
In 9x13 pan, stir together macaroni, shredded cheddar cheese, cottage cheese, sour cream, ketchup, tomato, and onion.
In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
Bake 30 to 35 minutes, or until top is golden. 

Mexican Mommy Mac

1 (8 oz) pkg. elbow macaroni
1 (8 oz) pkg shredded sharp Cheddar cheese (if its not sharp it will be a little bland)
1 (12 oz) container small curd cottage cheese
1 (8 oz) container sour cream (all things with sour cream are tasty!)


1pkg taco seasoning
1 medium tomato, chopped
1/4 C green onion, chopped
1/4C black beans, rinsed
1/4C corn
1 cup dry seasoned bread crumbs (or crunched up pringles or corn flakes - whatever you have)
¼ cup butter, melted

Preheat oven to 350 degrees.
Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
In 9x13 pan, stir together macaroni, shredded cheddar cheese, cottage cheese, sour cream, taco seasoning, tomato, onion, beans, and corn.
In a small bowl, mix together bread crumbs and melted butter.
Sprinkle topping over macaroni mixture.
Bake 30 to 35 minutes, or until top is golden.

Mommy's Pizza Mac

1 (8 oz) pkg. elbow macaroni
1 (8 oz) pkg shredded sharp Cheddar cheese (if its not sharp it will be a little bland)
1 (12 oz) container small curd cottage cheese
1 (8 oz) container sour cream (all things with sour cream are tasty!)

1 lb of ground beef, (and/or one package of pepperoni if you like)
1 small green pepper, chopped finely
1 small onion chopped finely
1C pizza sauce
1/2 C shredded Mozzarella Cheese

Preheat oven to 375 degrees.
Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
Cook your beef over medium high heat with your onions and peppers.
In 9x13 pan, stir together macaroni, shredded cheddar cheese, cottage cheese, sour cream, beef mixture, and pizza sauce.
Sprinkle with Mozzarella and cover with foil.

Bake 30 to 35 minutes, or until top is golden.
Take the foil off for the last 5 minutes of baking.
