Pumpkin Pancakes

1/2 C white whole wheat flour (trader joe's)
1/2 C oatmeal
2T brown sugar
1 1/2 tsp baking bowder
1/4 tsp salt
1/2 tsp each of cinnamon, ginger
1/4 tsp nutmeg
1 egg
1T oil
1C milk (or a little more - these are kind of thick)
1/3 C pumpkin (100% pureed - not pie filling)


In a preheated skillet on medium heat, brown until bubbles form. Then flip and do another minute or so on the other side.

To freeze, place on a cookie sheet and freeze. Once frozen, place in a container with a lid or zippered baggie with parchment paper in between.
Re-Heat in the microwave for 30seconds - 1 minute each.

These are great with honey butter or honey cinnamon butter. My kids eat them plain.
