Chicken Scampi

1/4 cup butter
3 tablespoons olive oil
3/4 teaspoon dried parsley
3/4 teaspoon dried basil
1/8 teaspoon dried oregano
2 cloves garlic, minced
1/2 teaspoon salt
2 teaspoons lemon juice
1 red pepper julienned
a package of chicken fingers or a 3 pack of breasts cut lengthwise into 3 each

Heat the butter and oil over medium high until it melts.
Add the parsley, basil, oregano, garlic and salt
Add lemon juice

Then add the chicken and saute for about 3 minutes
Add the red pepper sticks
Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked and the juices run clear. More butter/margarine can be added if needed. Especially if you're going to put this on top of angel hair pasta. Just use the juices from the pan to sauce your pasta.
