Fiesta casserole

1lb lean ground beef (or you can use Chicken)
1 onion chopped
2 C salsa
1 can black beans
1/4 C italian dressing
2 Tbsp taco seasoning mix
1C sour cream
1 pkg mexican shredded cheese
shredded lettuce
1 tomato diced

Brown the meat and onions, with italian dressing and taco seasoning.
In a casserole dish add the meat,onion, salsa, and top with the sour cream.
Top that with the cheese.
Cover with foil and bake at 400* for 30 minutes
take the foil off and broil until the cheese is bubbly

It works best to serve after letting this sit and firm up for about 5 minutes.

Top with lettuce, tomatoes, and maybe a little extra cheese or cilantro if you like it.

You can also freeze this at the point where you'd bake it.
To bake right out of the freezer:
Bake at 400* for 1 hour covered and another 15-20 minutes uncovered

I made this last night REALLY good, but I think it needs something 'more' in it, what ideas do you have? I also added some dry Italian seasoning into the meat while it was browning, helped give it more zip. :)

I have kids who aren't too picky but get diaper rash if I ramp up the spice too much.
You can zip up the taste with sharper cheese, more/different taco seasoning, different salsa/pico, etc. Obviously you could add a can of chiles or fresh hot peppers too if you like. It's a forgiving recipe so you should be able to make it work for any taste.
