Pumpkin Butter

4 cups cooked and mashed pumpkin or just use one (24oz +/-) can of 100% pumpkin puree (you'll notice a fresher taste if you just cook a small pumpkin and use the puree)
3/4 cup apple juice
1 1/2 cups white sugar
1 Tablespoon of pumpkin pie spice (or more!)
Combine pumpkin, apple juice, spice, and sugar(or splenda) in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently.
You can do this in a crockpot too if you watch it and stir every once in a while.

This is good on anything but especially good on cinnamon bread!
