Easy Chicken Cordon Bleu

1 pkg of chicken breasts
1 pkg of string cheese
8 slices of deli sliced ham
(Optional) parmesan cheese or bread crumbs
cooking spray

Take a package of chicken breasts and lay them out on a piece of cling wrap leaving about three inches between them. Top them with another piece of cling wrap. Use a rolling pin, starting in the center and working out, to flatten the breasts to about ¼ inch. Toss the top piece of cling wrap.
Place 2 slices of deli ham (smoked is yummy but regular is fine) on top of each chicken breast.
Place one stick of string cheese at the end of the breast and roll it up so that the ham and cheese are on the inside and the chicken is on the outside. Secure with a toothpick if necessary. NOTE: Use the colored toothpicks because the regular ones are hard to find and could prove to be nearly fatal. (Um… speaking from experience.) Yes it may color the chicken a bit but it’s worth it.
You can bread the chicken at this point if you want to. Breading it with Parmesan cheese instead of crumbs is pretty tasty.
Spray the bottom of a casserole dish with cooking spray and add the chicken.
If it’s not breaded spray a little cooking spray over the top of the chicken. I like the butter-flavored spray.
Bake at 350 for 35 minutes and check for doneness.

Gouda cheese is excellent in there too. I'd also try blue cheese for a little extra "Bleu."
