Boil your potatoes in a pan with a sprig of rosemary for 25-30 minutes until fork tender.
While they're boiling spray a cookie pan with cooking spray and sprinkle salt on top of that. (This will season the bottom of your potatoes. )
Once the potatoes are done place them on the cookie pan and smash with a potato masher or fork. Top with rosemary, salt, and parmesan. Spray each with a little butter flavored cooking spray and pop into the oven with your main course until the tops brown a little. (or if using alone just broil for a bit.)
