Make Ahead breakfast burritos

Mornings at our house, like every other household, are pretty busy. It's important that I get some protein in my breakfast though so making breakfast burritos ahead of time is my solution.





This is how I make them but you can add ANY ingredients that you like.





1 tall carton of Egg beaters


1 pkg of bacon crumbled


1 pkg cheese


Sour cream


Whole wheat tortilla 8"





Scramble your eggs. Add bacon and any other toppings you like.


Place one spatula full of egg mixture in the tortilla.


Add a little cheese and sour cream.


Fold the sides in about an inch, then roll the tortilla up and place it in a freezer container seam-side down.



Mine fit great in a rectangular ziplock container.





When you're ready to eat, just microwave for 1-3 minutes or until the cheese is bubbly. No need to defrost.



Other ideas for filling:

Hashbrowns, onions, green peppers, chiles, ham, cream of whatever soup, etc.
