Pesto stuffed Chicken

4 small boneless skinless chicken breasts
Butter flavored cooking spray
1C italian bread crumbs
4 Tbsp. pesto
1/4 cup Shredded Mozzarella Cheese

PREHEAT oven to 400ºF.
Coat chicken with cooking spray and roll in bread crumbs.
Place in 8-inch square baking dish.
BAKE 20 min. or until chicken is cooked through (165ºF).
With a knife, make a slit long ways in the chicken so that it resembles a pita.
Stuff each chicken with 1T pesto.
Sprinkle with cheese. Bake an additional 5 min. or until cheese is melted and lightly browned.

Many times I'll make this without breading it and without the cheese. It's also very good that way! Also save time by using microwave steam bags to steam your chicken to make it juicy and then brown it a little in the oven or in a skillet.
