Beer Battered Onion Rings [ Crisps ] - Baked

2 yellow onions
2 cups buttermilk
(or sour cream or 2C regular milk + 2tsp lemon juice)
1 cup flour,
1/2 C panko
1/2 C Italian Bread Crumbs
12 ounces beer,
3 tablespoons grated Parmesan

Cut onions 1/2-inch thick, and separate into rings.
Soak in buttermilk for 1 hour.
Combine1/2 cup of Panko and 1/2 cup Italian bread crumbs, mix thoroughly.
In a medium bowl combine beer and 1 cup of flour, mix thoroughly.
Remove onion rings from buttermilk, shake off excess, dredge in panko mixture, shake off excess, then dip in beer batter
Lay them on a sheet pan and bake at 400* for 20 minutes or until brown and crispy.
Garnish with parmesan.

Feel free to use the batter for chicken, shrimp, pickles, string cheese, whatever your heart desires to be breaded.
