Mexican Crockpot Chicken

1 lb uncooked chicken breast
1 package (1 oz) taco seasoning mix
1 can (15 oz) black beans, drained, rinsed
1 can (11 oz) Mexicorn, undrained
2 cans Ro*Tel
1 green and 1 red bell pepper or something hotter if you like
optional: tortillas

If you want to serve whole chicken breasts, sear the chicken 2 mins on each side before adding to the crockpot. This is the way I like to do it. BUT if you want shredded chicken you don't have to sear it first.

Toss black beans in crockpot.
Top beans with seared chicken.
Top chicken with Mexicorn and peppers
Top Mexicorn with 2 cans of Rotel.

Cover and cook 3-4 hrs on low.

You can add some sour cream or cream cheese in the last 10 minutes if you like a creamy texture also.
