Peanutbutter Brownie muffins

3/4 cup sugar
1/4 cup butter
1 tablespoon water
About 2 cups of milk chocolate chips
1 egg
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon baking soda
1 cup creamy peanut butter

Preheat oven to 350 degrees F.
Grease mini muffin pan with baking cooking spray or butter.
Combine sugar, butter, and water and microwave on high 1 minute or until butter is melted. Stir in 3/4 cup chocolate chips until melted. Stir in egg and vanilla.
Add flour and baking soda and stir until blended. Cool to room temperature.
Stir in 1 cup chocolate chips. Spoon batter into muffin cups.
Bake 13-15 minutes until top is set and a toothpick comes out slightly wet.
The center should cave it as it cools. If not, help it along if you need to with a spoon.
Microwave peanut butter on high for 45 seconds, then stir. While brownies are still hot, fill the caved in portion with peanut butter. Garnish with extra chocolate chips or even peanutbutter chips.
Make sure they're completely cooled before even trying to take them out of the pan.
