Angel Hair Pasta with Garlic and Shrimp

3 tbsp butter
3 tbsp vegetable oil
2 cloves garlic, minced
small bag of shrimp any size really – deveined
1 3/4 c. bottled clam juice (I leave this out sometimes)
1/3 c. dry white wine or chicken broth
1 1/2 tsp dried oregano leaves1
(12 oz) package angel hair pasta, uncooked
grated Parmesan cheese

Cook pasta according to package directions. Drain.
Meanwhile, melt butter in a large skillet over medium heat. Stir in oil. (Butter tastes better and adding the oil helps it not to burn.)
Add garlic and cook 1 minute, stirring constantly.
Add clam juice, wine, and oregano.
Boil until liquid looks more like a sauce, about 10 minutes.
Add shrimp to sauce and cook until they’re pink. Toss hot pasta with sauce.
Sprinkle a little cheese on top.
