Crockpot Garlic Pot Roast with Veggies

3 to 4 lbs. boneless beef roast
1 envelope ranch salad dressing mix (may be light)
1 cup Italian dressing (may be light)
1/2 c beef or chicken broth
6 cloves garlic
1/2 lb small new potatoes cut in half
4 green onions chopped
1 C carrots (from a bag is fine) fresh or frozen
1C fresh or frozen corn

Pour broth into slow cooker.
Place veggies and then the roast in slow cooker.
Sprinkle ranch over roast.
Pour italian dressing over that.
Cover and cook on Low for 6 to 7 hours.

You can also add one can of your favorite "cream of ___" soup (concentrate) if you want to make a gravy. I just don't because I don't want the extra caloreis and don't like gravy.
